Goodbye


Yep, it is time to let this blog RIP.

I'll still be around checking in on all of you as time permits, but I will not be making any new posts on this blog.



I want to say a huge thank you to all my readers.

It is so very humbling (& COOL!) that so many of you have subscribed/followed this blog since I began last July.

There are oh-so many awesome blogs out there, but you chose to swing by & read what I had to say.

Thank you.

I'm leaving you all with a favorite Irish Blessing of mine.

It's a bird, it's a plane, it's...Menu Planning Monday!

Off to a late start this week, but here it is...Menu Planning Monday!

Shredded BBQ Beef in the crock pot, whole wheatbuns, salads
Gotta love these easy meals - add 1 (or 2 - just as easy to make a double batch & it freezes well)3lb chuck roast (it is a little fatty but a less costly cut of beef - you can use whatever you like) to your crock pot. Add 1/2 bottle of your favorite BBQ sauce. Turn on low & let it cook all day. Fish out any bones & hunks of fat (doesn't that sound appetizing?). Shred with a fork & serve on buns or rolls.

Mini Bacon Meatloaves, baked sweet potatoes, green beans
Since you make these in you muffin tin, not only does it drastically reduce your baking time, but it makes for ease when watching your portions!
I just make a basic meatloaf - lean ground beef, an egg, some finely chopped onion, a clove of minced garlic, some oats, a squirt of ketchup, seasonings - and fill my muffin cups with it. Then I take 1/2 slice of bacon and drape it over the top of each muffin.
Bake at 350 degrees for about 15 minutes then turn on the broiler for a few minutes to crisp up the bacon a little bit.

Grilled Caeser Chicken Wraps, carrot & celery sticks & seedless watermelon
I like to marinate boneless/skinless chicken breasts in some caeser dressing for a few hours before grilling. Once they are fully cooked & have rested a few minutes, slice thinly for the wraps. Take a tortilla & add romaine, tomato, grilled chicken, a smidge of freshly grated parmesan or romano cheese & a drizzle of light caeser dressing. Fold 'em up & consume!

Gotta use reduced sodium soy on this or it is waaaay too salty (& we're salt fiends) & I do the hot sauce to taste because every brand has a different heat level.

Not sure yet what the hubs wants for Father's Day. Best guess is 'meat on grill' plus potatoes & corn on the cob.

At least he is easy to please food-wise!
